Porridge isn't just for sweet versions. This savory porridge is a delicious alternative for a refined and nourishing breakfast or brunch. Creamy oatmeal meets the tangy sweetness of roasted cherry tomatoes and the richness of a runny egg, creating a comforting blend of flavors and textures. Follow this simple recipe to create a savory porridge that will tantalize your taste buds.

Ingredients :

  • 200g oat flakes
  • 80cl of soy milk (or other vegetable milk of your choice)
  • A handful of cherry tomatoes
  • An egg
  • Salt and pepper, to taste

Preparation :

  1. Cooking porridge:

    • Pour the oatmeal into a saucepan.
    • Add the soy milk, salt and pepper to season.
    • Bring the mixture to a boil over medium heat, stirring occasionally to prevent the flakes from sticking to the bottom of the pan.
    • Reduce the heat to low and simmer for about 5 minutes, continuing to stir regularly to achieve a smooth, creamy consistency.
    • Once cooking is complete, remove the pan from the heat, cover it and allow the porridge to swell off the heat for a few minutes.
  2. Cooking the egg and cherry tomatoes:

    • While the porridge is resting, bring a pot of water to the boil.
    • Dip the egg carefully into the boiling water and cook for about 7 minutes to obtain a runny yolk and a cooked white.
    • Meanwhile, preheat a frying pan over medium heat. Cut the cherry tomatoes in half and brown them in the pan with a small amount of olive oil. Let them cook until slightly softened and lightly browned.
  3. Assembly :

    • Once cooked, drain the egg with cold water to stop the cooking, then carefully peel it.
    • In a serving bowl, pour the creamy porridge.
    • Arrange the roasted cherry tomatoes on top of the porridge.
  4. Runny egg at the top:

    • Place the runny egg in the center of the bowl, cutting it slightly so that the yolk drips onto the porridge.
