Applesauce without added sugar
- 200g apples (peeled and cut into small pieces).
- 80g squeezed apple juice without added sugar
- 2 teaspoons of Archi'v vinegar
- 5g of NH pectin
- 1 teaspoon of cinnamon
- pinch of salt
Gingerbread
- 70g T45 flour
- 30g of almond powder.
- 2 teaspoons spice blend
- 3g baking powder
- 15g coconut sugar
- 1 egg
- 50g sugar-free apple juice
- 1 pinch of salt

We are particularly sensitive to Yushi's work and approach, so we wanted to introduce her to you.
When she moved to France, Yushi was surprised to see the almost non-existent offer of healthy desserts. In particular, she was looking for cakes that would not make her feel guilty because of their high sugar and calorie content, as she was used to eating them. So she started making her own creations!
Dessert has its place in a healthy daily routine!
This is his credo. For this, Yushi always seeks to limit sugar intake. Its objective: to seek the perfect and subtle flavors to satisfy the taste buds. In this way, it avoids drawing their attention to the absence of added sugars. To top it off, Yushi also seeks to use good fat to optimize fiber and vitamin intake, etc. & always with this idea of reducing caloric intake in mind.
One day in December, she uses her bottle of archi'v cider vinegar for the final touch of acidity which will perfect the sauce for her delicious gingerbread.
These little things that change everything, allow Yushi's cooking to achieve so much flavor without an ounce of guilt.

For the applesauce
In a saucepan; mix the apples, juice, Archi'v vinegar, cinnamon and a pinch of salt. Mixer.
Then heat and add the pectins. Continue stirring until it boils and continue to cook for another 2-3 minutes, until the pectin is completely dissolved. Leave to rest for 2 hours in the refrigerator.
For the gingerbread
Sift together the flour, almond powder, spices, baking powder.
Pour in the apple juice and add the coconut sugar and salt. Mix. Add the egg, and mix again.
Pour the preparation into a buttered mold beforehand and bake at 175°C for 25 minutes.
Presentation
Unmold the gingerbread when the bread is still warm. Using a piping bag, add the compote to the gingerbread.
Finish by decorating the gingerbread with apple slices; cranberries, some star anise and cinnamon sticks.
