Recipe for French toast and cherry pickles with cider vinegar Archie

Fancy an original French toast recipe? Looking for a good cherry pickle recipe? Archie suggests combining the two in a delicious recipe using cider vinegar. A treat to share that will surprise your friends.

For 2 people

For the pickles

  • 1 large handful of cherries
  • 4 tbsp apple cider vinegar
  • 4 cases of water
  • 1 tbsp sugar
  • 1 tsp salt

For the French toast

  • 1/2 baguette
  • 1 egg
  • 10 cl of milk
  • 1 tbsp sugar
  • 1 pinch of cardamom (optional)

For the whipped cream

  • 1 tbsp mascarpone
  • 15cl of whipping cream
  • 2 tbsp icing sugar

We are fans of her work for her artistic eye and the originality of her recipes. Our culinary stylist innovates once again and offers us a recipe for French toast, whipped cream and cherry pickles with cider vinegar. Spoiler: it's to die for.

Steps

1. Start with the pickles:
In a small saucepan, heat the water, vinegar, sugar and salt. Bring to the boil. Meanwhile, hull and pit the cherries, then place them in a clean jar. Pour the vinegar over them, and close immediately. Store in a cool place (the pickles will keep for up to three weeks in the fridge).
2. Cut the baguette into pieces. In a bowl, whisk together the egg, milk, sugar and cardamom. Soak the baguette pieces in the mixture, then brown them in a pan until golden brown.
3. In a very cold bowl, whip the mascarpone, icing sugar and liquid cream (also very cold) until it is very firm.
4. Serve the French toasts a little cooled, with the whipped cream and cherry pickles.
