For the pickles

  • 1 large handful of cherries
  • 4 cases of cider vinegar
  • 4 cases of water
  • 1 case of sugar
  • 1 teaspoon of salt

For the French toast

  • 1/2 baguette
  • 1 egg
  • 10 cl of milk
  • 1 case of sugar
  • 1 pinch of cardamom (optional)

For the whipped cream

  • 1 case of mascarpone
  • 15cl of whipping cream
  • 2 tbsp of icing sugar

Today we present to you Ada's incredible work. Ada is as comfortable behind the stove as she is at staging her lovely recipes (and those of others). We are fans of his work for his artistic eye and the originality of his recipes. Our culinary stylist innovates once again and offers us a recipe for French toast, whipped cream and cherry pickles with cider vinegar. Spoiler: it's to die for.

Steps

1. Start with the pickles:
Heat the water, vinegar, sugar and salt in a small saucepan. Boil the water. Meanwhile, hull and pit the cherries, then put them in a clean jar. Pour the vinegar over it, and close immediately. Store in a cool place (the pickles will keep for up to three weeks in the fridge).
2. Cut sections of baguette. In a bowl, whisk together the egg, milk, sugar and cardamom. Soak the baguette pieces in the mixture, then fry them in a pan until they are nicely browned.
3. In a very cold bowl, whip up the whipped cream by whisking the mascarpone, icing sugar and liquid cream (also very cold), until it is very firm.
4. Serve the French toast toasts, slightly cooled, with the whipped cream and cherry pickles.
