This reimagined gingerbread is both:

Ingredients
Serves 3 to 4 people
Homemade applesauce:

200g of apples (peeled and chopped)
-
80g of unsweetened apple juice
-
2 tsp Archie'v apple cider vinegar
-
5 g of NH pectin
-
1 tsp of cinnamon
-
1 pinch of salt
Gingerbread:
-
70g of T45 flour
-
30g of almond flour
-
2 tsp gingerbread spice mix
-
3 g of baking powder
-
15g of coconut sugar
-
1 egg
-
50g of unsweetened apple juice
-
1 pinch of salt
For the finishing
Yushi's suggestion

Apple slices
-
Cranberries
-
Cinnamon sticks
-
Star anise
Preparation
1. Apple compote

In a saucepan, mix apples, juice, Archie'v cider vinegar, cinnamon and salt.

Blend everything together to obtain a puree.

Heat, add the pectin and bring to a boil.

Cook for an additional 2 to 3 minutes.

Refrigerate for 2 hours.
2. Gingerbread

Sift together flour, almond flour, spices and baking powder.

Stir in the apple juice, coconut sugar, and salt.

Add the egg and mix well.
-
Pour into a greased mold.

Bake at 175°C for 25 minutes.
3. Training
-
Remove the gingerbread from the mold while it is still warm.

Using a piping bag, pipe dots of compote on top.

Decorate with fruit, whole spices or zest as desired.
