This revisited gingerbread is both:

  • Light

  • Rich in taste
    …and subtly enhanced by our Archie cider vinegar.

Ingredients

For 3 to 4 people

Homemade applesauce:

  • 200 g apples (peeled and chopped)

  • 80g of unsweetened apple juice

  • 2 tsp Archie'v apple cider vinegar

  • 5 g of NH pectin

  • 1 tsp cinnamon

  • 1 pinch of salt

Gingerbread:

  • 70 g of T45 flour

  • 30 g of almond powder

  • 2 tsp gingerbread spice mix

  • 3 g of baking powder

  • 15 g of coconut sugar

  • 1 egg

  • 50g of unsweetened apple juice

  • 1 pinch of salt

For the finish

Yushi's suggestion

  • Apple slices

  • Cranberries

  • Cinnamon sticks

  • Star anise

Preparation

1. Applesauce

  1. In a saucepan, combine apples, juice, Archie'v cider vinegar, cinnamon, and salt.

  2. Mix everything together to obtain a puree.

  3. Heat, add the pectin and bring to a boil.

  4. Let cook for 2 to 3 more minutes.

  5. Refrigerate for 2 hours.

2. Gingerbread

  1. Sift together flour, almond powder, spices and baking powder.

  2. Stir in the apple juice, coconut sugar, and salt.

  3. Add the egg, mix well.

  4. Pour into a buttered mold.

  5. Bake at 175°C for 25 minutes.

3. Training

  1. Unmold the gingerbread while it is still warm.

  2. Using a piping bag, pipe dots of compote on top.

  3. Decorate with fruit, whole spices or zest as you wish.
