How to make your own cider vinegar?

Fancy a 100% homemade, natural and living cider vinegar?
Here is a simple recipe, accessible to everyone, to prepare your own cider vinegar from raw, unpasteurized cider and a little patience.

Ingredients

  • 1 liter of unpasteurized dry cider

  • 1 cup of organic apple cider vinegar with the “mother” (this naturally occurring substance contains beneficial bacteria)

  • 1 clean glass jar

  • 1 piece of thin fabric or a dishcloth

  • 1 elastic band

Preparation

  1. Mix the cider and vinegar with the mother in a glass jar.

  2. Cover the jar with the fabric or cloth, then secure it with an elastic band.

  3. Place the jar in a warm, dark place , such as a cupboard.

  4. Let it ferment for 3 weeks , stirring lightly every few days.

  5. Taste it: if the mixture has developed a vinegary taste , it is ready.

  6. Transfer to a clean bottle and store in the refrigerator.

Uses

Once ready, your homemade cider vinegar can be used like a regular vinegar:

  • In vinaigrette , to season your salads

  • In your vegetable or meat marinades

  • As a drink , diluted in a large glass of water

This gives you a living, unpasteurized, and homemade vinegar, ideal for cooking.
