You know the music…and so does The Social Food.
The iconic duo has taken our favorite cider vinegar and created a cocktail that's as ingenious as it is virtuous.

Because we've all seen those forgotten fruits at the bottom of the fridge end up in the trash. Shirley & Matthieu had a brilliant idea: give them a second life. The result? A homemade fruit vinegar made from peels and Archie vinegar. 100% useful, 100% eco-friendly.

Ingredients

  • 400 g of end-of-life fruit (peelings, zest, damaged pieces, etc.)

  • 1 L Archie Apple Cider Vinegar (organic, unpasteurized)

  • 60 g of sugar

Preparation

Mix everything in a large glass jar.
Cover with a clean cloth (not a tight-fitting lid), then place the jar in a cupboard.
Let ferment for 10 days.
Strain to remove the fruit, and transfer to a bottle.

Use

In a cocktail

Ideal for the day after a party.
Add a large tablespoon of your fruit vinegar to a glass of very cold water with a little honey and ice cubes.

In the kitchen

Perfect in vinaigrette , in sauces , or to enhance roasted vegetables.

Conservation

Before filtration: up to 1 month in a cupboard.
After filtration: unlimited , at room temperature.
