Fancy trying one of the best snacks in the world? The day has arrived. Just for you: the recipe for French toast with cherry pickles, twisted with cider vinegar. It's surprising, melt-in-your-mouth, tangy, and above all... unforgettable.

For 2 people
Cherry pickles

1 large handful of cherries

4 tbsp Archie apple cider vinegar

4 tbsp water

1 tbsp sugar
-
1 tsp salt
French toast
-
½ baguette (a little stale is better)

1 egg
-
10 cl of milk
-
1 tbsp sugar
-
1 pinch of cardamom (optional)
Chantilly
-
1 tbsp mascarpone
-
15 cl of whipping cream
-
2 tbsp icing sugar
Step 1 – The pickles
In a small saucepan, heat the water, cider vinegar, sugar and salt.
Meanwhile, hull and pit the cherries.
Place them in a clean jar, then pour the boiling liquid over them.
Close immediately. Keep refrigerated. These pickles will keep for up to three weeks in the refrigerator.
Step 2 – French toast
Cut the baguette into sections.
In a bowl, whisk together the egg, milk, sugar and cardamom.
Soak the pieces of bread in this mixture.
Brown them in a very hot pan, on each side, until they are nicely caramelized.
Step 3 – Homemade whipped cream
In a very cold bowl, whisk the mascarpone, the very cold whipping cream and the icing sugar.
Whip until you get firm whipped cream.
Step 4 – Dressage
Serve the French toast pieces warm.
Add a generous spoonful of whipped cream, then a few cherry pickles.
Let it melt… and enjoy.
