There are simple recipes… and then there are those that become classics from the first bite.
This is the case with these cucumber pickles in cider vinegar, shared by food stylist Margot Jumeline.

Using a bottle of Archie water, she came up with this homemade recipe: quick, tasty, and perfect for boosting your gut microbiota every day.
Ingredients (for a small jar)

10 cl of Archie cider vinegar

15 cl of water
-
20 g of sugar
-
1 pinch of salt
-
1 bay leaf
-
1 fresh cucumber (to be cut)
Preparation
1. Prepare the marinade
In a small saucepan, bring to a boil:

Archie's apple cider vinegar
-
water
-
sugar
-
salt
2. Cut the cucumber
During this time :
-
Wash the cucumber
-
Slice it into thin strips using a mandoline.

Place the slices in a clean glass jar
-
Slide the bay leaf in there
3. Pour & store

Once the mixture is hot, pour it over the cucumber slices.

Allow to cool to room temperature

Close the jar and keep refrigerated
How to enjoy them?
These pickles are:

Delicious on their own, as an aperitif.

Perfect in a raw vegetable salad

Ideal in a sandwich, a bowl, or with an Asian-inspired dish.
