Archie's Cucumber Pickles with Apple Cider Vinegar Recipe

There are simple recipes… and then there are those that become classics from the first bite.
This is the case with these cucumber pickles with cider vinegar, shared by food stylist Margot Jumeline.

Starting with a bottle of Archie, she came up with this homemade recipe: quick, tasty and perfect for boosting your microbiota every day.

Ingredients (for a small jar)

  • 10 cl of Archie cider vinegar

  • 15 cl of water

  • 20 g of sugar

  • 1 pinch of salt

  • 1 bay leaf

  • 1 fresh cucumber (to cut)

Preparation

1. Prepare the marinade

In a small saucepan, bring to a boil:

  • Archie's Apple Cider Vinegar

  • water

  • sugar

  • salt

2. Cut the cucumber

During this time :

  • Wash the cucumber

  • Cut it into thin strips using a mandolin

  • Place the slices in a clean glass jar

  • Slide in the bay leaf

3. Pour & store

  • Once the mixture is hot, pour it over the cucumber slices

  • Let cool to room temperature

  • Close the jar and keep cool.

How to taste them?

These pickles are:

  • Delicious on their own, as an aperitif

  • Perfect in a raw vegetable salad

  • Ideal in a sandwich, a bowl, or with a dish with Asian accents

And as a bonus?
They're excellent for your gut! Thanks to apple cider vinegar, they give your gut flora a little boost.
